Radiographer Susan Lynch and Web Designer Alan Coughlan first met whilst working in the same hospital in Cork. As the years went on, their relationship went from strength to strength and it was during a holiday in South Africa that Alan popped the question. “I knew I wanted to propose to Susan during the holiday, I just wasn’t sure where. But while visiting a national park we say a hiking trail to a waterfall and I knew it was the perfect spot,” Alan recalls. Alan got down on one knee and presented the ring in the breath-taking scenic surroundings of a shallow stream and exotic wildflowers, and of course Susan said yes. Both being Cork natives, the couple decided to host their wedding in the Rebel county with a ceremony in St Michaels Church in Rathbarry followed by a reception in the Celtic Ross Hotel Rosscarbery.
Susan’s highlight of the day was the ceremony. “I really loved walking up the isle with my dad and seeing all the people there for us in one place. I relished every minute of it from beginning to end. I remember standing at the door of the church after the ceremony holding Alan’s hand and watching all my guests laughing and enjoying the sunshine outside. I will cherish that memory forever,” Susan explains.
The couple were particularly delighted with their decision to have Susan’s cousin Alan play a saxophone solo during the ceremony. Alan surprised Susan with a hired car on the morning of the wedding while the bride organised an ice cream van to be present after the ceremony, which was truly appreciated by all of the guests. The couple’s music choices also fit their individual spirit, with tunes including ‘Can you feel the love tonight’ from The Lion Kind and ‘Across the Stars’ from Star Wars.
How was your experience with the Celtic Ross Hotel?
“We were so impressed beyond words with the staff and service at the Celtic Ross Hotel. We would love to do it all again! Marie, Neil and the rest of the staff made us feel so at home and everything they did was top notch. There was nowhere that compared to the value and service which the Celtic Ross offered. The food was delicious, we had duck and hake for our mains which was just mouth-watering. Alan is vegan and there were no issues with the staff accommodating this, they made him a delicious risotto. I got ready in the hotel’s Warren Suite an di would highly recommend it. It was a beautiful room overlooking the water which made me feel so relaxed. Marie, the wedding co-ordinator, went above and beyond for you. She helped us turn the sweet cart on sit into a gin and tonic cart which our guests loved. We can’t recommend the Celtic Ross enough.”
